Bromelain is a class of cysteine protease enzymes that break down other proteins by cutting the chain of amino acids. It is an enzyme extract from the pineapple plant, especially the stem, which has a history of use in folk medicine. It can digest proteins and has anti-inflammatory and immune-modulating effects. It is also used as a meat tenderizer and as a dietary supplement.
